I love warm salads! For me this is one of the best comfort foods a vegan can possibly get. The difference of textures makes it very delicious and you can always experiment with the warm ingredients you use creating your own special dish.


Today we are making an amazing warm salad - my new favourite. It’s very light and hence great for someone watching their calories, it has a good amount of protein and is very filling.


I use fava beans but it can be easily substituted with edamame, other white beans or even peas.


I use mixed greens but you can pick any base you like for your salad. Fan of lettuce? Go for it.


This salad is super easy to make, it is delicious, light and vegan. Ready? Let’s go cooking!


We will need: (for 2 portions)

1,5 large green zucchini 

1,5 cups (1 cup - 250 ml) of fava beans (I use frozen ones)

5 pieces of marinated artichokes 

1/2 of red onion

1 shallot (optional)

Oil for frying

Herbs de Provence

Green leaves of you choice 


Some people peel the beans, I don’t. I think it’s absolutely unnecessary plus the more fibre the better so I cook them as they are, but if you wish to peel them, you are more than welcome.


Add some oil to the pan, chop the onion and the shallot. I love to add shallots because they contribute a lot of sweetness to the dish and they have a very mild flavour. Sauté onions first, then add zucchini. I like to make thin strips out of them. Don’t make them too thin as otherwise they will fall apart during cooking process.


Add beans. Sauté for about 10-12 mins. At the end add your artichokes and some herbs de Provence. I don’t even add any salt because artichokes are marinated and they have all the necessary saltiness already.


Place the salad leaves, add cooked ingredients on top. Ready to serve!
