Today we are making my new simple and delicious vegan pasta with sweet potato sauce.
I love fast and easy recipes. Makes any dish better that you don’t have to spent half of the day cooking it and then cleaning after.
Sweet potatoes are rich in vitamin A, C, B. It’s rich in beta-carotene and antioxidants.
You can add any herbs to this sauce.
From oregano and lavender to paprika and chilli. Your choice!
Ready? Let’s start cooking! We will need: 3 sweet potatoes 1 shallot 2 garlic cloves 6-7 cherry tomatoes 2 tablespoons of pine nuts (optional) 3/4-1 cup of water + 2 tablespoons spoons any plant based milk (1 cup - 250 ml) Herbs to your taste Salt and olive oil Pasta of any type
Peel your sweet potatoes, chop them. Clean garlic and shallots. Place foil on the pan and spread your vegetables. Add tomatoes and pine nuts.
Bake till ready or about 25 minutes at 175C/325F.
Boil any pasta. I use spelt.
Drain it.
Blend with water. Add two tablespoons of any milk. I use soy. Blend well, salt to taste, add herbs.
Blend again, then pour over your pasta, mix, serve.
You can add some goat cheese, fresh herbs like parsley or cilantro.
The flavour is going to be amazing!
