Happy winter time everyone! It’s time to start cooking some good old fashion comfort food. How about vegan paella? It’s so good you are not going to believe that only a few basic ingredients can make this result possible. This dish is very colourful, super hearty and can satisfy anyone. You can use any white beans you want, and green beans are optional- they add some great colour and make paella look very appetising. For those who are worried about not being happy enough with the vegan dish, add some cheese on top or even chicken if you like. Ready? Let’s start cooking! We will need: 1/2 white onuon 2 garlic gloves 1 red bell pepper 10-12 small tomatoes 1 cup (1 cup - 250 ml) of arborio rice (you can use any rice you want) 2 cups of vegetable or any other stock (or 1 cup of sock and 1 cup of water) 400 ml of canned butter beans or other white beans a handful of green beans (optional) A pinch of saffron Oil for frying Dice your onion and garlic. Sauté it on a low heat. Add pepper. Then add tomatoes. Don’t cut them. Add then as a whole. Add rice. Cover with the stock and let it boil on a low heat for 20 minutes max. Add saffron. This will add colour and some extra flavour. Rice should be cooked through. Add the butter beans and the green beans. Cook for 10 mins. Salt the dish. Ready to be served! |
