This year apple trees in my garden got very generous to us so I ended up with hundreds of kg of apples to work with.


They are cooking apples, not perfect outside but amazingly juicy and easy to cook.


So first thing on my mind was: “I have to make an apple pie!” I wanted to make it easy, rustic, with very little fuss. So, here we go! My one and only the best ever rustic apple pie!


I make it with brown sugar, loads of cinnamon and spelt flour (because I like its nutty flavour but you can use regular wheat flour).


You can use any vegan butter you prefer or even regular butter if you are a vegetarian.


The crust is flaky, buttery, the filling is so soft and tender. OMG! I am not going to lie it’s been two weeks and I think I made about 15 of them.


Don’t forget you can bake your pie, cut in individual slices, wrap each of it in plastic wrap and freeze.


This way you can enjoy your pie throughout the cold season. Ready? Let’s start cooking!


We will need:

For the crust

2,5 cups of white spelt flour

200 g of vegan or regular unsalted butter

3 table spoon of brown sugar

2 table spoons of water if necessary 

For the filling 

5-6 very large apples

1/2 cup of brown sugar

1,5 tablespoons spoons of cinnamon

2 table spoons of spelt flour

Extra sugar for the dusting 

 


Mix in your mixer flour, sugar.


Add butter. I like to use my butter when it’s soft, in this case I don’t have to add much water.


Start mixing.


Peel your apples.


If your flour mixture is still too dry, add water.


Make a large ball then split it in two.


Chop your apples. I suggest make bits slightly smaller if you want your pie to cook fast. 


Add lots of cinnamon and sugar. Mix well then place in a microwave for 7 minutes. Then cool down a bit and add a few tablespoons of flour. In this case you don’t have to add any gums or starch to it.


Dust your surface with some flour. Roll each piece with the help of parchment paper. Just like in the picture.


Help yourself with the knife to carefully lift the dough.


Place it in the dish.


Add apples to it. Repeat with the dough for the cover, pinch edges with a fork, brush the top with some milk or an egg wash, then dust with sugar.


Bake for 40 minutes at 180C or till golden and you can see bubbling apples are about to come out.


Ready! Cool completely. Serve!
