Well, it’s summer! Finally!
It means we have to watch our figure and eat more fresh fruits, vegetables and greens.
Today we are making an incredible salad for those who are on a diet or just love eating vegan.
it fresh, crispy, has some protein in it and can be a great lunch itself or a side dish.
I use very thin dressing that makes this salad absolutely delicious.
Sweet and sour - my favourite!
I love this salad so much I can eat it every day. Super easy to make and SO healthy! Ready? Let’s start cooking. We will need: (2 portions) Fresh kale (enough for 2) 1/2 cup (1 cup - 250 ml) of cooked butter or any white beans 3 tablespoons spoons of hemp seed 1 tea spoon of pumpkin seeds 1 table spoon of flax seeds 1/2 large avocado For the dressing 1 table spoon of lemon juice 4 tablespoons of olive oil 2 tablespoons of water 1 tea spoon of honey or agave syrup Salt to taste
There are a few types of kale, I would suggest getting the most tender one.
Wash the leaves and remove the hard stems. Chop. Add avocado, seeds, beans. I used canned beans. Please, rinse them before adding to the salad.
Mix everything for the dressing. Adjust to your taste: if you like it sweet add extra honey, if you like it sour add some more lemon juice. Don’t forget the salt.
Mix well, let it sit for 10 minutes. Serve!
