Today we are making an incredible vegan bread.
You better memorize this recipe because you will be making it over and over again. It’s so easy and delicious.
This bread is soft, moist, fairly sweet, healthy, has no eggs or any dairy products.
We all have soft and dark bananas in our pantry so it’s time to use them and create a miracle! For my bread I use spelt flour and brown sugar. You can substitute it with your regular flour and white sugar.
I also add walnuts for the texture but this step is very much optional if you simply don’t like nuts or are allergic to them.
You can add dry fruit or chocolate chips, maybe even flaxseeds to it. Will be amazing!
Ready? Let’s start cooking! Will need: 2 cups of spelt or wheat flour (1 cup - 250 ml) 3 medium bananas 1 cup of brown or white sugar 1 table spoon of baking powder 1/3 cup of olive oil 1/4 cup of soy or any other milk 1 tea spoon of Apple cider or white wine vinegar Cinnamon to taste (optional) Handful of walnuts (optional)
Please use as ripe bananas as possible. It will help the sugary content as well as the texture.
Mash them, add sugar.
Add oil, vinegar, milk.
Add flour, baking powder, cinnamon.
Add walnuts or chocolate chips or both if you wish.
Bake for 45 minutes at 175C/325F.
Make sure it has baked through. Cool it down completely before slicing.
