I don’t eat pasta every day but when I do I make it should be perfect!


Today I want to share with you my wonderful recipe. It’s very simple, it’s clean and it’s suitable for people who must avoid eggs in their diet.


Spelt is packaged with manganese, phosphorus, niacin, zinc and iron. It’s high in fiber.


it has slightly nutty flavor and great for making pasta since it has some gluten. In this recipe I make the thinnest pasta possible but you can easily pick another type and go thicker creating pappardelle or even lasagna noodles.


You don't have to add spinach or any nuts, it was just my choice, but I think it’s very delicious this way but you can be creative make your favorite pasta sauce to your taste.

Ready? Let’s start cooking!


We will need:

2 cups of spelt flour

1/2 cup of water

For the sauce 

2 cups of spinach

1 table spoon of fresh garlic

2 table spoons of pine nuts

Oil for cooking



Mix flour and water.


Prepare the dough by kneading.


This is the hardest part of the recipe- I promise. Should turn out like a play dough. If it’s too wet, add some flour. I would actually suggest to keep it on a dry side. It’s safe for your pasta and it will not fall apart during the next step of boiling.


Cover it with a plastic wrap and place in a fridge for 15 mins to cook. 


In 15 mins take the dough out of the fridge and cut it. Portions should be even.


Take some of your dough, sprinkle with some flour, place you machine on the setting number 0 and roll your pasta.


Fold it in half and repeat the procedure.


Then change the settings to 1 and roll you pasta sheet. Then change to 2 and repeat the procedure. 


Do exactly the same thing till you reach 6 in my case or any other desired thickness.


6 is the maximum I would go.


Feed the ready sheet into the cutting blades and make your pasta.


You can also just cut it with a knife if that’s easier for you. 


Dry on the pasta rack. Repeat with the rest of the dough. 


Boil you pasta for 2-4 mins. The thinner the pasta the faster it cooks. Drain it.

Prepare the sauce.


Chop some garlic and fry it on a pan with some oil.


Add spinach, salt. Add nuts. Mix everything with you pasta.
