I have a lot of Argentinian friends and they all love their favourite flavour  - Dulce de Leche - “candies made of milk” in Spanish.


It’s very rich, similar to our caramel flavour but a bit more on a milky mild side.


I remember trying candies they bring from Argentina: sweet, overpowering with sugar and calories. Very delicious but not healthy at all.


After a recent World Cup with Argentina playing in a finals I got inspired and made this new recipe- an amazing summer treat healthy my way Dulce de Leche ice cream.


It has no refined sugar, it’s rich in flavour, has a great smooth texture and is an absolutely MUST to try this summer.


Argentina might have lost the World Cup but you will definitely be a winner if you make this ice cream.


Ready? Let’s start cooking!


We will need:

For the paste

20 large dates + 5-6 dates for extra flavour 

1 cup of any milk + few tablespoons to mix with extra dates

4 table spoons of agave syrup (optional)

For the base

600 ml of soy creamer of regular double cream 

3/4 cup of any milk

1/2 teaspoon of guar gum (optional)



Blend your dates with milk, add agave and set aside.


In a blender mix your soy creamer or double cream with 3/4 cup of milk of your choice.  Add your date mixture. Add guar gum. This will create more velvety texture of your ice cream but this step is optional.


Pour everything in your ice cream maker and let it work its magic.

When done pour in a glass container. I made some extra dates mixture (5-6 dates plus some milk)to make this ice cream super rich, but you can decorate it with some chocolate or even jam -  no problem. 


Cover with plastic wrap.


That blocks the air from forming ice and hardening ice cream.


Place in your freezer for 5 hours minimum.
