I start every morning with a cup of chamomile tea with mint, so there’s always some mint in my house. The most interesting thing is that being such a fan of this fresh greenery, I never cooked anything with it.

Today I am fixing this and presenting you a wonderful, summer, very light and healthy salad.

I’m sure a small amount of ingredients and ease of cooking will make this salad your favorite.

Ready? Set? Let’s go cooking!

We will need: (1 portion)

1 cucumber

3 tbsp. of fresh mint

4 dark olives

1 tbsp. of lemon juice

Olive oil

Salt and black pepper to taste

Everything is extremely simple!

Cut the cucumber with a potato knife.

Chop the leaves of mint.

Cut the olives.

Add lemon juice, oil, salt and pepper.

Done! Bon appetit!
