Recently I had a serious craving for corn and thought I have to make something with it, so decided to go with the soup.


Amazingly it turned out to be such a delicious little discovery!


I added cauliflower for extra texture and creaminess, which gives the soup a beautiful, velvety consistency without making it heavy.


It’s light, naturally sweet, silky and incredibly easy to make.


It’s also low in calories and a great option for both adults and kids. Serve it with a drizzle of olive oil and fresh herbs on top.


Simple, comforting and delicious! Ready? Let’s start cooking!


We will need:

4 cups of frozen corn (1 cup - 250 ml)

1/2 of large cauliflower 

2 small shallots

6 cups of water or any broth

1/4 - 2/3 cup of soy or any other milk

Salt to taste 


 Add corn, cauliflower, water in a pot and start boiling.


Clean the shallots and add to the pot.


When vegetables are ready. Blend it all together gradually adding milk. Remember it’s always much easier to fix the thickness problem With extra liquid than the other way around. 


Salt it and serve!


Add some chives or olive oil. It’s delicious! Enjoy!
