I love the season of autumn!


It’s that time of the year when you really appreciate your comfort food the most. Today we are making an amazing healing, warming dish - my bright and colourful carrot soup with sweet potatoes, pumpkin and ginger. 


It’s slightly sweet, spicy and very tasty. And how cheerful it’s orange colour is! 


You would be pleasantly surprised how just a few ingredients creat such a great combination.


Add a toast with some goat cheese or a smoked salmon and here we go! Fantastic lunch is not a problem anymore.


Ready? Let’s start cooking!


We will need:

4 cups of water (1 cup - 250 ml)

1/4 small butternut squash 

2 carrots

3 sweet potatoes 

1 tablespoon of fresh ginger 

1 teaspoon spoon of fresh garlic

2 tablespoons of olive oil

salt, dry ginger, chilli flakes, honey to taste



Peel your veggies.


Chop garlic and ginger.


Sauté garlic and ginger with some olive oil.


Cube your veggies and place them in a pot.


Add water. I would not recommend using any stocks, it might ruin the flavour of the soup.


Boil. Add salt, a few drops of honey for an extra aroma, dry chilli flakes.


Ready! Healthy, healing soup is ready to save you during the cold times.
