Today we’re baking wonderful banana muffins, the recipe of which, I have no doubt, will become one of your favorite ones.
For these muffins, I use coconut flakes, oats and whole wheat flour.
The aroma of fresh bananas is complemented by coconut oil, which makes these muffins delicate and very tasty.
Brown sugar gives a piquant note and creates a mild sweetness.
An excellent addition to breakfast.
My children love these muffins with peanut butter or homemade jam.
For the ones who like experiments and everything sweet, I recommend adding a few chocolate chips to the recipe, then your muffins will easily turn into a delicious dessert. Ready?
Let’s go cooking.
We will need: (6 muffins)
1/2 cup (1 cup-250 ml) of coconut flakes
1/2 cup of oats
1/2 cup of whole wheat flour
1/2 tsp. of baking soda (I use baking powder)
1.5 ripe banana
1/4 cup of coconut oil
1.5 tbsp. of apple cider vinegar
3 tbsp. of almond, soy or any other milk
1/2 cup brown or coconut sugar
Preheat the oven to 165C / 325F.
Grind the flakes and oats in the blender to the consistency of flour. Mix with the whole grained flour and add baking soda.
Chop the banana, add oil, vinegar, milk, and sugar.
Pour this liquid into the dry composition. Mix and fill the molds with it.
After 20 minutes, the muffins will rise, blush, and your house will be filled with a terrific fragrance of incredibly delicious vegan banana muffins.
