Well, that’s it: all winter holidays are over and I am sure we are all ready to move forward to some healthy and happy future.
Today I would like to share with you my new amazing recipe. It’s very refreshing, vibrant and may be a great addition to your table.
You know the regular tabubouleh?
Well, forget about it! I am bringing you a new twist of this well well-known dish. It’s gluten-free, made with colourful quinoa and pomegranate, with no cucumbers or tomatoes needed.
I use very light dressing that makes the dish fresh. Fresh mint and parsley makes it healthy - a very important part of any diet.
I can also confirm it's kids-friendly. My 5 sons loved it and were happy to have it for lunch.
It’s also easy to make so you can definitely bring kids to the kitchen to help you cook this salad. What a great plan for the 2022, don’t you think?
Enough talking, let’s go cooking!
We will need:
1/2 cup of quinoa
1/2 fresh zucchini
1/2 medium size red onion
3 table spoons of pomegranate
1 bunch of fresh parsley
1/2 bunch of fresh mint
1/2 lemon - just the juice
1 tea spoon of agave or honey
3 table spoons of vegetable oil
Large grain salt
Boil the quinoa.
Cut the zucchini in small cubes.
Chop the onion.
Follow with the mint and parsley.
Add pomegranate.
Mix lemon, oil, agave.
Combine everything, salt.
