Well, the autumn is officially here! Not sure if I am happy about it or not but I am definitely into new fall recipes – especially ones with apples involved. Apples scream autumn to me, so the moment I smelled apples in the store I knew I was making something special, warming and yummy.


Making this story short, let me start with my new creation: quinoa apple bread. I must say it’s “to die for” but let me explain. It has no gluten, it’s mildly sweet, very soft and it smells delicious.


Quinoa is very good for your health: has lots of protein, it’s gluten-free, high in fiber, magnesium, vitamin B, potassium, calcium, vitamin E etc.


This bread can be a great breakfast addition for you or a nice lunch for your kid at school. His or her classmates will be jealous! Trust me!


Quinoa has a very unique smell, so I think it goes well with the touch of cinnamon. You are going to love it! 


 

 

 

 

 

I prefer my bread warm, but it tastes amazing cold too.

Let’s go cooking!

 

We will need:

1 cup (250 ml.) of white pearl quinoa

1 cup of gluten-free oats

1/3 cup of coconut oil (melted)

1/3 cup of brown sugar

1.1/3 cup of any plant based milk (I use rice milk)

1 table spoon of maple syrup (optional)

2 table spoons of apple vinegar

1/2 tea spoon of baking soda

1 tea spoon of baking powder

1 tea spoon of cinnamon

2 large apples (peeled) 

Warm up your oven to 165C/325F. Grind your quinoa to make a fine flour. Do the same with the oats. Mix your soda, flours, baking powder, sugar, spices. 

Separately mix milk, vinegar, oil, syrup. Combine dry ingredients with the wet ones. 

Cube your apples. I suggest to cube them very in small pieces so that your bred doesn’t not fall apart while slicing it when ready. Add your apples to the “dough”. 

Oil your pan. 

Bake for 40 minutes. 

Let it cool if you can. It’s way too delicious! 

Slice it up and enjoy!
