Tomorrow is one of the most favorite holidays of my family, Halloween. Hooray!
This holiday is about 2000 years old, and its origins go back to the ancient Celts. For this holiday, our house turns into an “abandoned castle” with friendly ghosts and funny skeletons hanging on the walls, large pumpkins flaunting on the street, and in the oven … you guessed it!
Chocolate pie! Between ourselves, we call this pie “spooky”, since it uses very dark chocolate and appears slightly untidy.
In other words, the exact opposite of my usual baking.
Just like Halloween – a very unusual holiday!
For its base, I mostly use walnuts and spelt flour – an excellent combination!
By the way, spelt flour has a very low gluten content and can be used by those following a gluten-free diet.
It is aromatic, moist and moderately sweet.
For the cream, I use soy cream cheese, but you can easily replace it with a regular one and simply use cashew cream from my carrot cake recipe.
Just add a little cocoa powder, and you have got a healthy cream!
This wonderful pie perfectly beautifies your holiday table and will please both the children and the adults.
Ready? Set?
We are not afraid!
Let’s go cooking!
We will need:
For the base
1 cup (250 ml.) of walnuts
2/3 cup of almonds
1/4 cup of coconut flakes (I use reduced fat ones)
3/4 cups of spelt or whole wheat flour
1/2 tsp. of baking soda (I use 1 teaspoon baking powder)
2/3-3/4 cups of brown sugar
6 tbsp. of sugar-free cocoa powder (for a less sweet version)
1 cup of plant-based milk of your choice (I use soy milk)
1/4 cup of odorless vegetable oil (I use canola oil)
1 teaspoon of apple cider vinegar or lemon juice
1/2 tsp. of vanilla extract (optional)
Cinnamon (optional)
For the cream
250 g. of any cream cheese (I use soy cream cheese)
2 tbsp. of sugar-free cocoa powder (for a less sweet version)
1/3 cup of chocolate chips or any regular chocolate + a bit for decoration
Vegetable oil for the mold
Preheat the oven to 165C / 325F.
Grind the nuts, add cocoa powder, flour, baking soda, sugar & cinnamon.
Mix together the liquid ingredients. Add vanilla if you want.
Combine the liquid and dry ingredients. You should get a dough.
Lubricate the mold with oil and spread the dough there.
Bake until the toothpick is dry, that should take about 50-60 minutes.
Mix everything for the cream.
Take out the pie, let it cool off.
It is very important that the pie is cooled, otherwise, the cream that you applied will simply melt.
Cover the pie with the cream. Sprinkle with chips or nuts for beauty.
Cool it off and serve.
Done! Spooky and Happy Halloween, everybody!
