
I love cream soups!
I’m ready to eat them under any circumstances because they are so easy to cook and perfectly fill you up.
Today we’re cooking a wonderful cream soup that will please everyone.
Very “beety” and very tasty!
This beautiful soup can become a wonderful snack in the middle of the day.
Nutritious thanks to walnuts and mushrooms, it will perfectly satisfy the hunger and give you some strength.

Let’s go cooking!
We will need: (2 servings)
2 cups (1 cup – 250 ml) of vegetable broth or water
2 medium beets or 1 can of cooked beets (425 g)
1/4 of a white onion
4 tbsp. of walnuts
1/2 large portobello mushroom or 5 champignons
3 tbsp. of dried cranberries
1 handful of fresh cilantro
Oil for frying
Cook the beets. Peel them.
Grind the walnuts, onions and mushrooms.
Fry in vegetable oil over low heat. Add cranberry.
Cover with the broth.
Add the beets. Cook for 2 minutes and put in the fresh green herbs. Cook for a minute.
Transfer it to the blender.
Blend.
Done!
