Soup purée with green onions and cauliflower (vegan)

So, the summer is almost over- too bad.
But the good thing is that my recipes will stay with you forever, so you, for example, can make this summer soup any time you want.
Today we are making an amazing and super easy-to-prepare soup made with green onions and cauliflower. You might think that it is quite an odd combination but I will surprise you: it’s perfect! Even though this dish has only few ingredients, the soup has a very nice and creamy texture and a smooth taste.
I add some roasted almonds for the texture, but it is optional. My kids loved this soup. It’s a little sweet and very comforting. Try it! For your kids or for you – this is really good food!
Ready? Let’s go cooking.

We will need:

1/4 medium cauliflower

3 green inions strings.

1/2 cup (1 cup – 250 ml.) of any plant-based milk (I use rice milk)

1/2 cup of water or broth (extra liquid)

Salt and black pepper to taste

Just a touch of olive oil

Sauté your cauliflower, add onions, cover the pot.
Add milk.
Pour into the blender, add water. Add slowly to the consistency you need. Add the nuts and the oil.
Ready! Enjoy!

    Лида, исследую ваши супы, очень интересно и вкусно!Сейчас, летом, у нас в России свободно и недорого можно купить хорошие цв. капусту и брокколи, но зимой все будет по-другому. И дорого и сомнительного качества. Как вы думаете, эту капусту можно морозить в вареном виде? Сколько она храниться так? Пробовала замораживать сырую- странная какая-то становится.
