I love broccoli very much and eat it every day, in raw form though. My husband is still not ready for something like that, haha, so I cook it for him instead.
Today, I present you with an excellent and very simple soup. All the ingredients are affordable, and most importantly – very healthy. Everyone will like this soup.
I strongly recommend cooking such soup with vegetable broth or water, as the meat-based brothes will muffle the interesting apple notes.
If your loved one cannot live without meat and does not recognize vegetable soups, I advise you to add a little boiled chicken to the soup before serving, then everyone will be satisfied.
Ready? Set? Let’s go cooking!
We will need: (2 servings)
500 ml. of vegetable broth
1 small broccoli (florets)
1/2 large apple
1/2 white onion
4 tbsp. of apple juice
1 tsp. of lemon juice
1/2 tsp. of rosemary
1/2 tsp. of white pepper
1/2 tsp.of thyme
Vegetable oil for frying
Cut all the vegetables. Do not forget to peel the apple.
Fry the onions and apples in vegetable oil.
Add broccoli and spices.
Cover with the apple juice, broth and lemon juice. Add salt, if necessary. Cook until broccoli is ready. Grind in the blender. Done!
Slightly cool and serve! Bon appetit!
