
Today we are preparing a wonderful and very unusual soup.
I’m aware how much you like my soup recipes, so I decided this time to come up with something special for you: Red lentil and apple soup.
Usually, an apple is presented in such recipes in the form of puree but now, I leave it in pieces.
Very tender and unusual! Sweet potatoes can be substituted with pumpkin if the first is not available.
Slightly sweet and very nourishing.
Red lentils are much smaller than their green relatives, so when cooking, they give a pleasant density and light “potato” effect, when the liquid broth turns into a slightly thick and mouth-watering soup base.
You’ll like it! Light, gentle, with a warm note of turmeric.

We will need: (3 servings)
3 cups (1 cup – 250 ml.) of water or vegetable broth
2 sweet potatoes
1/2 apple
1 carrot
1/4 large sweet red pepper
1/4 onion bulbs (I use a sweet white onion, but you can use any onion)
3.5 tbsp. of red lentils
1/4 tsp. of cumin
Vegetable oil for frying
Red pepper and salt to taste
Remove the skin from the apple and cut it into pieces. Do the same with all the vegetables.
Put oil in a pan and fry. Sprinkle with spices and cover with the broth.
Cook for a few minutes, then add lentils.
Cook until the lentils are ready.
Done!
