As a child I loved honey cakes: they are big, fat, fragrant, with lots of layers.

God, they were so sweet!

Only now I understand how much stuff was in it, and that such cake could replace all your daily meals instead of being just a dessert.

Scary to imagine, how many unwanted calories and heavy ingredients were in it, but let’s not spoil the childhood memories …

Today we’re making one of my favorite cakes but in a new way.

Very delicate, incredibly delicious, as fragrant as the cake from my memories, with only one important difference – it’s healthy! 

Moderately sweet, gluten-free, easy to cook, and also very beautiful, at least to me.

I have to put “one more piece” warning here, so better prepare all the willpower you have and read the recipe.

You’ve been warned. Hehe.

No matter how proud the title sounded, there is no honey in the recipe.

The main role is played by the combination of ginger, apple and cinnamon.

When I just started to cook this cake, I did not know that the resemblance to the original would be so accurate.

My children and husband ate the cake with great pleasure, I hope this recipe will become a favorite in your family too.

Ready? Set?

Let’s go cooking!

We will need: (1 average cake)

For the basis

1 cup (1 cup-250 ml.) of pecans

1/2 cup of almonds

1/4 cup  of coconut flakes

10-13 large, soft dates

1/2 tbsp. of cinnamon

For the cream

1 cup of cashews

1 red apple

5 tbsp. of maple syrup or honey

2 tbsp. of coconut oil

2/3 cups of almond or regular milk

1 tsp. of dry ginger

1/2 tsp. of cinnamon

Pecans for decoration

Soak the cashews in cold water for at least 3 hours.

Grind the almonds, coconut flakes & pecans.

Add the dates.

Add the cinnamon. Mix everything.

Pour 1/2 part of the basis in the baking mold, keep the rest aside.

Drain the water from the cashews.

Add the apple (peeled), syrup, milk & oil.

Add the spices. Mix everything…

…to get a delicate cream, cover the cake mix with 1/2 of this cream. Put it in the freezer and let it freeze. Take it out.

Add another layer of the cake mix.

And finish with a layer of the remaining cream.

Put it in the freezer until it freezes.

Done!

Decorate with nuts or whatever toppings you like.

Serve!
