Soup is always the way to go if you feel like a nutritious but light meal.
It’s usually easy to make and it does not take a lot of time and effort.
I prefer soups that consist of minimum ingredients and can also be super healthy for you.
Today we are making very tasty, little sweet but at the same time refreshing carrot soup with mint.
Great soup for summer – light but filling, natural boost of vitamins A, K and B6.
This soup is thick and tasty. Pine nuts are a great addition to the carrots as they add wonderful flavor to them. Try it! You will not regret making this soup!
Let’s go cooking!
We will need:
1,5 cup (1 cup is 250 ml.) of water
1/6 of white onion
1 sweet potato
1 tea spoon of pine nuts
1 table spoon of lemon juice
Cumin, salt, pepper to taste
Chop your carrots, onion, potato and boil them in water.
Add it all to the blender with the nuts, juice and mint leaves. Add water slowly so your soup becomes liquid enough, but not too much so.
Add the spices.
Ready to serve!
