
I don’t like winter, I feel cold all the time, so hot soups are on the top of my diet since the first cold day.
Today I share with you a very simple and delicious semolina soup.
Nothing superfluous, the soup is medium-thick and very fragrant.
Curry plays an important role in it, giving the semolina a completely new coloring both literally and figuratively. I like this soup spicy, so I add a lot of red pepper, but the choice, as always, is yours.
Don’t forget about parsley for the smell and color! Ready? Set?

We will need: (2 servings)
600-700 ml. vegetable or any other broth
2 carrots
1/2 onion
1 clove of garlic
4 tbsp. of semolina flour
1/2 tsp. of curry
1/2 tsp. of paprika
Large bunch of fresh parsley
Red pepper, salt (to taste)
Olive oil
Peel and chop the onions, garlic and carrots.
Fry them in olive oil.
Add spices.
Fry semolina in olive oil on a low heat for about 5-7 minutes. It should darken a little. Be careful: do not burn it.
Cover the vegetables with broth and add semolina there.
Cut the parsley and add it to the soup.
Cook until the semolina is ready. Fast, simple and very tasty!
