
I have not cooked cookies for a long time so please forgive me!
I have been lazy and had no time.
Every time I imagine I have to roll all these cookies, I just give up.
Usually, that’s the thoughts that occupy my mind after a day with my five boys.
Usually, but not today. Today we’re cooking a brilliant lemon biscuit with poppy seeds.
Moderately sweet, slightly crispy but soft inside. Ve-e-ery tasty!
For chia seeds lovers, I advise you to use them, poppy seeds will be fine for all others.
It will be easier and more affordable. These cookies do not contain flour, gluten (for this you will need gluten-free oats).
РThe recipe is very simple to prepare and requires only a desire. Let me share some of mine with you!
Ready? Set? Let’s go cooking!
We will need: (18-20 pieces)
1/3 cup (1 cup – 250 ml.) of rice flour
1/3 cup of almond flour
1 / 2-2 / 3 cups of gluten-free oats
1/4 cup of coconut flour
1/2 tsp. of starch (I use guar gum)
A pinch of soda
1/4 cup of sugar of your choice
1 tbsp. of poppy seed or chia seed
1 tbsp. of lemon juice
1/2 tsp. of fresh lemon zest
3 tbsp. of coconut oil
4 tbsp. of applesauce
Preheat the oven to 165C / 325F.
Mix all kinds of flour, baking soda, starch, and sugar.
Add either the poppy or chia seeds.
Add the zest.
Add the butter, applesauce and the juice and combine to form a dough.
Next comes the most tedious part … forming the cookies.
Line the baking tray with baking paper and distribute the cookies evenly.
Bake for 15 minutes or until the cookie slightly blushes.
Done! So aromatic, the whole house will smell good!
