It’s a very simple and delicious soup. Surprisingly, the cashew nuts give the illusion that the soup contains real cream.
Celery is a very healthy food: it lowers blood pressure, contains magnesium, potassium, helps in the fight against cancer and inflammatory processes.
Cashews, in turn, are rich in magnesium and copper (for bone health), are the most low-calorie nuts that do not contain cholesterol and are rich in natural antioxidants.
This soup can be eaten both cold and hot, just warm it up a bit.

We will need: (2 servings)
1/2 cup (250 ml cup) cashews
5-6 sticks of celery
1 cup of vegetable broth or water
1 teaspoon of lemon juice
Salt and black pepper to taste
If you have powerful blender soak cashews in water for 3-4 hours, and overnight otherwise.
Grind all the ingredients in the blender until pureed.
Fast and tasty!
