
I love when my recipe “happens by accident”.
Like the one that I want to show you today. That day my fridge was almost empty except for a few ingredients that you can see on the list below.
I was too lazy to go shopping so I decided to create something simple from what I had. And it turned out amazing!
Quinoa has some very special earth notes to its taste that go absolutely great with brussel sprouts and beans. The dish turned out to be a great meal for the whole family.
Husband approved, kids loved it and I was very happy to be able to manage my “empty fridge” so well. Couldn’t have gone any better!
You can eat it as a main dish or with some fried egg, or with fish as a side.
It’s simple, tasty and very easy to make.
Probably that’s what I can call my comfort food. Ready? Let’s go cooking!
We will need:
2 cups (1 cup – 250 ml.) of white quinoa
10-12 brussel sprouts
1/2 cup of white beans (I use canned)
2 table spoons of lemon juice
Salt and pepper to taste
Oil for frying
Boil your quinoa, then rinse.
I use canned beans but you can cook yours from scratch. Up to you.
Chop sprouts in halves.
Fry your sprouts. They should be slightly burned. Trust me, it’s tastier this way. Add salt, pepper, juice.
Then it’s time to add beans and quinoa. Mix it well.
Ready to serve!
