Well, this is almost the end of 2018! I can not believe it came so fast! Can you? This year at our house we got the biggest Christmas tree ever – so it’s smells like the Holiday Season all over our place.
But what exactly does that mean to me?
Cinnamon, ginger and a lot of love – and that’s why we a making my amazing and super flavorful special gluten-free ginger bread cookies.
They are crunchy, they are not overly sweet and quite healthy for you.
No flour, and those are vegan! No kidding Best Christmas cookies ever! Also they are how we like to call it – “guilt-free”.
So, let’s bake these babies! Ready?
Let’s go cooking!
We will need:
1,5 cups (1 cups – 250 ml.) of gluten-free oats
1/2 cup of of raw buckwheat groats
1/3 of coconut oil
Cinnamon, dry ginger (to taste)
2 tablespoons of molasses
1 table spoon of coconut sugar
2 table spoons of an orange juice
1/4 of a fresh orange zest
Warm up your oven till 165C/325F.
If you have store bought flour, that’s great but if you don’t then simply grind oats and buckwheat till it’s flour-like consistency. Mix together with other ingredients.
Form the cookies and place them on a cookie sheet.
Bake for 12-15 min – tops. Cool your cookies down, they will firm up after a while.
That’s it! Easy, crunchy, tasty and delicious!
