
Summer is here and that means of course the days are much hotter than they used to be. Now most of us would love to choose food that will help “cool us down”, so we are looking for something cold but tasty.
We can eat cold soups, ice cream – all that is true, but today I want to give you a great solution for a cold breakfast. Even though it may sound a bit odd, but… just wait until you try it!
Today I want to share with you a very easy-to-cook and tasty recipe that, I am sure will stay with you for a long time this summer.
Today we ware making overnight oats with pecans and cinnamon. It has no sugar, it’s very sweet – thanks to dates, super easy to make, and it’s totally vegan.
Make it in the evening and your morning will be sweet and healthy as it has never been before. Ready? Let’s go cooking!
We will need:
1/2 cup of gluten free oats
10 pecans
3 dates
2/3 – 3/4 of any plant based milk
1 table spoon of maple syrup (if needed)
Cinnamon (to taste)
I prefer to grind some of my oats because I like my oatmeal soft and smooth. Grind a half like I did or skip this step if you prefer.
Grind your nuts or just chop them if you don’t mind big pieces.
Chop your dates.
Mix oats, nuts and the milk. Add dates and cinnamon. Mix well, cover and store in the fridge through the night.
Take out in the morning, mix again and enjoy.
