
I don’t know about you, but I’m cold!
January is January, even here in California, it’s pretty cold outdoors now, so time and time again I want to cook something to warm up myself.
What about thick and fragrant bean soup?!
Today we’re cooking a little sweet, rich, nutritious soup with white beans and oats.
It’s sweet, thanks to carrots and orange juice. Yes, correct. In this recipe, there is a place for orange juice, which perfectly refreshes our dish. So thick and satiating – thanks to the oats and beans.
A cup of this soup will perfectly replace both the first and second courses. Moreover, you do not need even bread! All in one! An additional note of health is made by the inclusion of green broccoli and a useful curry spice.
It’s nice to wrap oneself in a warm and soft blanket, serve a cup of this soup, when outside the window … of course not -20 C, but nonetheless winter, and spend your time watching your favorite movie.

We will need (3 servings)
3.5 cups (1 cup – 250 ml.) water or vegetable broth
1 carrot
1 small floret of broccoli cabbage
1 cup of cooked light beans (I use canned)
2.5-3 tbsp. of oats
1/2 tsp. of curry
1 tsp. of orange juice
Vegetable oil for frying
Black pepper and salt to taste
Grate the carrots and fry in vegetable oil.
Cut broccoli florets and add them to the pan.
Rinse the beans if they are canned, and add to the pan together with the broth.
Boil for a while, then add the oats.
Add the spices and juice.
Cook it until the oats is ready. Done!
