In America, such a cake will be more likely called bread, but for a Russian person, according to the familiar concepts, it is, nevertheless, a cake.
Very tasty and crumbly. Everyone will like it!
Such a recipe can be supplemented with nuts, then your bread will not only be very tasty, but also nutritious, although, personally, I prefer an extra spoonful of dark raisins.
Let’s go cooking!
We will need: (1 medium bread)
1 cup (250 g.) whole wheat flour
1/2 cup of sugar-free cocoa powder
1/2 cup of white or brown sugar
1/2 cup of vegetable oil
1 ripe and large banana
1/2 tbsp. of baking soda (I use baking powder)
1/2 large zucchini or 1 medium zucchini
1 tsp. of cinnamon
1/2 tsp. of vanilla extract
4 tbsp. of dark raisins
Nuts, chocolate chips (optional)
Vegetable or coconut oil for the mold
Preheat the oven to 165C / 325F.
Mix the flour, baking soda, cocoa powder, cinnamon. Chop the banana with a fork, add sugar and vegetable oil.
Grate the zucchini. Mix the dry composition with the liquid one.
Lubricate the form with oil and spread the dough there.
The bread is ready when the toothpick comes out dry.
Do not overbake it otherwise it will be too dry!
