
Today I present you our new favorite delicacy!
My children do not speak English yet, so we don’t say the word “donuts” at home, but the word “ponchiki” (Russian: пончики) is known to everyone, and the phrase “I’ll take two” is known even better, hehe.
Soft, juicy and very tasty, I don’t have enough words to describe them more colorfully.
You can decorate such “donuts” as you like: from chocolate to glaze (like I did). You can cover them with honey, maple syrup, or with an ordinary homemade jam.
What a great dessert!
Ready? Set? Let’s go cooking!
We will need: (9-10 pieces)
1/2 cup (250 grams) of oats
1/2 cup of all-purpose flour
1/2 tbsp. of baking soda (I use baking powder)
50 ml. of almond or regular milk
1 banana
1 tbsp. of flaxmeal + 3 tbsp. of water
2 tbsp. of coconut oil +
1-2 tbsp. of honey
Cinnamon to taste
For the glaze
2 tbsp. of cream cheese
1 tbsp. of coconut oil
2 tbsp. of powdered sugar
1 teaspoon of milk (if your composition is too thick)
Preheat the oven to 165C / 325F.
Soak the flaxmeal in water and let it stand for 5 minutes to start swelling.
Grind the oats in the blender to the consistency of flour.
Mix cinnamon, flour, baking soda and add oats.
Into a blender add the banana, seeds, honey and coconut oil and combine to form a homogeneous liquid mass.
Mix dry ingredients with the banana liquid.
Lubricate the mold with coconut oil and spread the dough there. Put it in the oven for 20 minutes.
Mix all the ingredients for the glaze and heat in a microwave for 20-25 seconds.
When the “donuts” are ready, remove them and allow to cool.
Dunk each donut into the glaze. As I said, you can decorate donuts in different ways: it’s easier to sprinkle with chopped nuts or pour chocolate on, as I did. Just dissolve the chocolate with a bit of water, and it’s done.
