I just love carrots!
I must admit – that’s one of my favorite vegetables.
From carrot cakes, to soups, carrots – one big love of mine.
Today we are going to make an amazing and very refreshing salad with quinoa, apples and almonds.
This salad is an amazing addition to any tables and diets. Leave almond aside if you are allergic to nuts, but other than that – it’s a very nice summer dish.
Carrots in general are extremely beneficial for your health.
It’s loaded with vitamins and antioxidants. Can help you improve your vision, balance your blood sugar and improve the digestion.
You will also get a boost of iron and zinc. Sounds like a plan to me!
Ready? Let’s get healthier, let’s make (and eat) some carrot salad!
We will need: (for 2 servings)
2 large carrots
3/4 cup (1 cup – 250 ml.) of quinoa (I use red)
1/2 of green apple
1/2 celery (can substitute with extra apple)
Almonds (to taste)
1 table spoon of lemon juice
1 tea spoon of ginger juice (can use a pinch of dry)
1 tea spoon of honey
1 table spoon of olive oil
Salt and pepper to taste
Shred your carrots.
Boil the quinoa.
Mix the carrots with celery.
Add apples and cilantro.
Mix everything for the dressing.
Combine all the ingredients together.
