I love quinoa! It’s super versatile: you can make so much with it. Plus it’s extremely beneficial. 


It has lots of magnesium, phosphorus, potassium, vitamin B3 and B2. It’s a high quality source of protein that will keep you full for a long period of time.


Today we are making an amazing vegan dish that all of my guests adore! It’s healthy, it’s light, it’s pretty too. There is a mix of different textures as well. 


You are going to love it! Ready? Let’s start cooking!


We will need:

1 cup of quinoa (250 ml) + 3 cups of water or broth

1 large zucchini 

1 cup of chickpeas 

1 cup of butternut squash or pumpkin 

olive oil and salt to taste 



Slice your zucchini. 


Add some oil and salt.


Bake it till soft for about 15 minutes at 325F.


Boil quinoa.


You can use water or broth - up to you. It will absorb all the liquid.


Clean the butternut squash.


Chop it and sauté in some olive oil.


Should look like this.


Drain your chickpeas, add quinoa, then zucchini to the pan. Carefully mix.


Ready! Serve warm.
