Finally, we are getting some summer vibes! It’s +26C, the sun is shining and our everything around is getting more beautiful by the day! To celebrate this short but meaningful time of our lives (why is summer so short?!) I would like to show you my new amazing recipe which will blow your mind!
For those who love green and filling salads, for those who think salads can make you happy and satisfied for those who believe in vitamins and like to eat healthy.
Today we are making my wonderful green salad with arugula, lentils, green beans and some other magic ingredients all of which you can find in the next steps.
Super easy to make, extremely healthy and can serve the purpose of a side dish or just as it is - a perfect summer day salad.
Let’s go cooking!
We will need:
1 handful of fresh organic arugula
3 table spoons of cooked lentils
20 string beans
5 table spoons of quinoa
2 table spoons of soaked cranberries
1 table spoon of pumpkin seeds
1/2 table spoon of lemon juice
Goat cheese or tofu (if you wish)
Cook your quinoa.
Boil the beans.
Put then in ice for about 2 min, then take them out and chill. Cut them in small pieces.
Soak your cranberries then chop them into small pieces.
Combine all the ingredients.
Add salt, pepper, lemon juice, add seeds.
Please, add some cheese or tofu - your choice.
