And yes – love them even more than fruits. My special favorites are the orange-colored ones: pumpkins, sweets potatoes, carrots.
Today we will talk about the delicious roasted carrots that I prefer to pair with roasted hazelnuts.
This great combination can ba a perfect light dinner option or just a healthy side with your main protein dish.
It’s super easy to make and it requires no speacial skills – just 20 minutes of your time.
Let’s ‘s go cooking!
We will need:
1 table spoon of apple cider vinegar
1 tea spoon of maple syrup
Vegetable oil (I use avocado oil)
For hazelnut “dressing”
20-25 hazelnuts (I use roasted)
1 tea spoon of tahini
1,5 tea spoons of apple cider vinegar
1/2 tea spoons agave syrup or honey
3-4 table spoons of water
Heat up your oven to 165C/325F.
Clean your carrots, cut them into stripes.
Mix with oil, salt, pepper, vinegar, syrup.
Bake till it’s ready – 15 minutes.
Mix everything for hazelnut dressing. Add salt and pepper if you like. Ready to serve! Pour over the carrots and enjoy!
