
Today we have on our table stunning cinnamon scrolls!
A completely new, but a much-beloved recipe of my family.
If we really like something, we cook it again and again, see the apple pie, which was our favorite was on our table every second day for several months.
Back to our scrolls … Moderately sweet, deliciously airy, consisting almost entirely of whole-wheat flour and oats, not containing butter, white sugar-free, no eggs or dairy products.
In this recipe, we use no yeast, because I just do not like its smell and try to avoid it in my dishes.
Despite this, our scrolls miraculously rise and increase in size.
In one word, a godsend for lovers of a delicious breakfast or a flavorful addition to coffee.
Very easy to prepare and quickly baked. Only 20-25 minutes, and it’s ready!
Usually, for such scrolls, sugar icing is served, but I prefer to replace it with cashew cream, although, in my opinion, they are already pretty sweet and hearty, and you can safely do without such additions. Serve these scrolls warm, but when cooled down it’s a completely new dessert. These scrolls can be stored in a closed container for a week.

Ingredients: (for 14 small scrolls or 8 large scrolls)
For the base
1 cup (250 ml.) of whole-wheat flour
1 cup of oats
1/2 cup of all-purpose flour + 3 tbsp. (or coconut)
3 tbsp. of brown sugar
1/2 tsp. of soda
1/2 tsp. of powder for baking (optional)
1 tbsp. of ground flax seed
1/2 cup of soft or melted coconut oil
3/4-1 cup of soy, almond or any other milk + 1 tbsp. of apple cider vinegar
For filling
3/4 cup sugar + plus cinnamon
2 tbsp. of coconut oil
For glaze
1/4 cups of damped cashews
1/2 cup of almond, soy or regular milk
1.5 tsp. of lemon juice
3 tbsp. of agave sugar
Preheat the oven to 175C / 350F.
Make flour from the oats and mix it with two other flours. In this recipe, the oat flour should be homogeneous to resemble the usual one. If you can not buy it or make such flour by yourself, then I would recommend you use 1 cup of whole-wheat flour, 1 cup of all-purpose flour and only 1/2 cup of oat flour, I guess it will be possible for your standard blender to combine it. In this case, particles of oats that have not been crushed, will not damage the texture of the scrolls. Add the sugar & soda.
Mix the oil with flax seed, milk & vinegar to get thick fat liquid. The milk has to curdle. Pour this mass into the dry ingredients, mix well.
Dust the board with 3 tablespoons of all-purpose flour and roll the dough with your hands or rolling pin. It seemed to me that it’s much easier to do this with your hands.
Lubricate the base with coconut oil, add brown sugar and cinnamon. Do not be stingy with latter! The more you add, the more delicious it’s going to be. Roll the dough in the direction to the top.
Cut it into portions. Lubricate the form for the dough, distribute the scrolls and put in the oven for 20-25 minutes.
It’s ready! Scrolls should rise and increase significantly in size. Tasty, fragrant and much more healthy than those bought in a store.
For the preparation of the glaze, simply mix all the ingredients in a blender to mix it until a smooth and slightly liquid mass is obtained.
