Peanut butter ice cream with cherries (sugar-free, vegan)

Great news – summer is finally heading our way!
So what does it mean?
It means lots and lots of ice cream!
Today I want to share one of my favorite recipes – peanut butter ice cream with cherries. It’s super healthy, it has no sugar or dairy, it looks amazing and the taste is just superb!
Not too sweet and very creamy.
My ice cream consists of just a few ingredients and is very easy to make. But be careful!
I am warning you: it’s hard to stop eating it. So let your summer be cool and… cool. Have some ice cream! Ready? Let go cooking!

We will need:

1,5 cup (1 cup – 250 ml.) of plant-based milk (I use the soy one)

1 cup of frozen cherries

7-8 dates

4-5 table spoons of peanut butter

2 table spoons of agave

1/2 tea spoon of guar gum

Mix together milk, the dates, peanut butter, guar gum. Blend well.
Defrost cherries and separate them from the liquid. Mix with agave and add to the milk base. Mix gently.
Pour into the container and freeze for 3-4 hours or until ready to serve.
Super delicious!
