
Holiday season is a special time for everyone.
As for me, I have an interesting tradition to cook something very new and delicious for my family, something that they have not tried yet, something, to my opinion, that will blow their minds.
Well, today is the day and we are making pumpkin donuts. Pumpkin, rice flour, oats make thesw donuts healthy, and a hint of cinnamon makes them very festive.
Trust me, your house will smell like a fairytale house!
These donuts are great addition to any breakfast, can be served as is or with jams.
I use a small size donut pan so it takes only 15 minutes to bake them to perfection, if you use a bigger one, get ready to test your patience for a little longer.

Let’s bake some easy and delicious vegan donuts!
Let’s go cooking!
We will need: (12 donuts)
3/4 cup of gluten-free oats
1/3 of rice flour
2 table spoons of chickpea flour
1/2 table spoons of baking powder
A pinch of baking powder
1/3 cup of brown sugar
1/3 cup of pumpkin puree
1 tea spoon of apple cider
2 table spoons of any vegetable oil
1/2 cup of plant base milk
Coconut oil for baking
Cinnamon to taste
Any type of coating (chocolate, sugar etc)
Grind the rice, oats and chickpea to get the flour. I do it in my coffee grinder. Super easy and cheaper than to buy ready-made flours at the stores.
Add cinnamon, baking powder, soda, sugar and mix well.
Mix pumpkin pure, milk, vinegar, oil. Combine the dry and wet ingredients.
Pour the mixture in the donut pan and get ready to bake them for 15 minutes. Let the cool down.
Dust with some sugar or coat with white chocolate.
