Baked cottage cheese with raisins (vegan)

I am a busy mom with 5 kids who has no time for complicated recipes, long list of ingredients and an option to make a mistake.
I know that my recipe must be simple, fast to complete and accurate.
Today I am going to share with you my new creation – baked cottage cheese with raisins. Growing up in Russia this was a very common dish on our tables but with a few exceptions: original dish had eggs, milk and even flour, was “heavy” and loaded with sugars.
Can not say it was not tasty but I know we can do better.
So today is the day! My dish has no eggs, no gluten, no cream, sugar etc. It’s super healthy and very easy to make.
Lots of protein, very filling and sweet enough to call it a desert.
It can make your breakfast shine or your evening snack feel great. Very silky, soft and delicious desert!

We will need:

430-450 gr. of medium firm tofu (do not use silky one)

1/3 cup of pine nuts

1/2 cup (1 cup – 250 ml) of any plant based milk (I use soy)

2 tea spoons of vanilla extract

1/3-1/2 agave syrup

3 table spoons of dark raisins

Warm up your oven to 165C/325F.
Dry your tofu by squeezing it a bit with paper towels so it can release the water.
Mix with other ingredients except the raisins and blend well.
I suggest to bake on a paper – in this case it will not stick to the sides of your dish or you can simply use silicone shapes. Add raisins.
Bake till it’s ready.
Cool down.
Super easy, consists of just a few ingredients and very tasty!
