
Today we’re cooking an incredible soup!
A gentle, slightly sweet, with a rich creamy flavor thanks to the cashews and an unusual chill of fresh mint.
It takes just 10 to 15 minutes to cook.
This soup is suitable for both children and adults.
It satiates wonderfully and consists of a small number of ingredients. A few words about the peas:
They’re small but healthy.
Green peas are an excellent source of magnesium, vitamin K, C, B2, B6, and B1.
They contain folic acid, zinc, potassium, iron, and are rich in fiber and protein. Simply put, a green miracle!

We will need: (3 servings)
1/2 medium onion
2 cups frozen green peas
2 cups vegetable broth or water
1/2 cup cashews
A handful of fresh mint leaves
Vegetable oil for frying
Salt and black pepper (optional)
Soak cashews for a couple of hours in water and then drain them. If your blender has a powerful motor, you can skip this step.
Cut the onion and fry it in vegetable oil. It should not be roasted, but only become a bit transparent.
Add peas.
Pour the broth in.
Cook it for 3-5 minutes. Yes, did that seem right to you? It couldn’t be any faster, right?
Add the mint. Cook for 1-2 more minutes.
Put the ingredients in a blender, add cashews, and whisk it.
Add salt and pepper to taste, if you want.
Done!
