
I often use beans in my cooking: sometimes I cook something sweet with them, sometimes a side dish, sometimes a soup…
Today we are cooking the latter. Introducing… a wonderful, nutritious and very healthy soup!
If you do not have sweet potatoes, you can replace them with a pumpkin, preferably butternut squash. All the other ingredients can be found in pretty much every home.
Ready? Set? Let’s go cooking!
We will need: (2-3 servings)
550 ml. vegetable broth or water
1 sweet potato or 150-200 g of pumpkin
1 can of black beans
6-7 cherry tomatoes
1/4 onion
2 cloves of garlic
1/2 sweet red pepper (for beauty and color, you can safely add a little yellow)
1/2 tbsp. of coriander
1/2 tsp. of white sugar
Bay leaf
Salt and black pepper (optional)
Vegetable oil
Cut the onion and pepper and put them into a saucepan.
Pour some vegetable oil in and stew.
Chop the garlic and cut the tomatoes with the skin.
Add them to the vegetables.
Add the bay leaf.
Peel the sweet potatoes and cut them into cubes.
Put everything in the saucepan, pour in the broth, and start cooking.
As soon as it boils, add the rinsed beans.
Add coriander, salt and pepper, if necessary. Cook until the potatoes soften, that should take about 10 minutes.
