I think that every vegan has tasted vegan butter.
This substitute for the regular one is sold in all vegan food stores.
Often it consists of soy or canola oil, some producers add salt, others add vitamins.
The taste of this butter is no different than the regular one.
So, today I will tell you how you can use it in your recipes.
We will prepare shortbread cookies!
They consist of just a few ingredients and will please everyone.
They can be made in various shapes and decorated with chocolate or jam, as I did.
Use your imagination!
Ready? Set? Let’s go cooking!
We will need:
1 cup (250 ml) of all-purpose flour
1/2 cup whole wheat flour
1/2 tsp. baking soda
1/2 cup powdered sugar or white sugar
1 Tbsp. brown sugar
7 Tbsp. (100 g) vegan butter, but you can use regular butter.
2 Tbsp. almond or regular milk or water
1/2 tsp lemon juice
1/2 tsp vanilla extract
Mix the butter with the sugars. Add the lemon juice and vanilla. In a separate bowl, combine the 2 kinds of flour and soda.
Combine wet and dry ingredients. Stir. Roll the dough into a ball, wrap it in plastic, and put it in the refrigerator for 20 minutes.
Take the dough out of the refrigerator and form the cookies. Line a baking sheet with baking paper and bake the cookies for about 15 minutes. Be careful that they do not burn.
When the cookies are ready, let them cool down and begin to decorate.
You can decorate them with chocolate or jam.
I use homemade cranberry jam.
It is just incredible!
Done! This cookie can be kept outside the refrigerator for a long time, but they will be eaten quickly.
