
Today is a special day for pancakes and chocolate lovers, which means that this is a special day for everyone because I just don’t know people who do not like either one or the other.
Really!
This amazing recipe came to my mind when my children split into groups one evening: some wanted something chocolate, while others demanded pancakes.
Dilemma?
Not for me!
Despite the fact that the pancakes are thick—the type they like in America—they are surprisingly tender, very chocolate, moderately sweet and incredibly tasty! Prepared from oats and whole wheat flour, brown sugar and cocoa powder.
Very affordable and simple ingredients that absolutely everyone has. Most interesting is that these pancakes are more delicious when chilled. I advise you to serve them with maple syrup, honey, or powdered sugar and decorate with fresh berries.

We will need: (8-10 pieces)
1 cup (250 ml) oats
1/2 cup whole wheat flour
3-4 Tbsp. cocoa powder
1/2 tsp. baking soda (I use baking powder)
5 Tbsp. brown sugar
1 Tbsp. white sugar
2 Tbsp. flaxseed meal
1 cup almond milk + 1 tsp. vinegar
2 Tbsp. vegetable oil + a little for frying
Grind oats until it’s flour.
Combine flour, baking soda, cocoa powder, sugar, and flaxseed.
Dilute the milk with vinegar to make it curdle.
Add the curdled milk to the dry composition, and add oil. You should get a wet dough. Let it stand for 3-5 minutes to allow the oats to absorb the liquid.
Heat a frying pan with a non-stick coating and grease it with oil only once. Cook the pancakes carefully. Scoop a very small portion of the mix into the ladle. Keep in mind that it will spread out a little more in the frying pan. Do not be afraid if the pancakes darken. It’s ok, they don’t burn; they are just made of cocoa powder. You need to turn them over when the lower part is slightly fried, but don’t wait until upper side is dry. Do this carefully as the dough is very tender. After the second pancake, you will have some experience, and everything will turn out fine!
