I really like to mix vegetables with sweets! Such experiments seem to me the most fascinating, and moreover healthy. Many parents suffer from the fact that their children refuse vegetables, and this becomes a big problem for both sides.
Today, I present you with a special recipe: suitable for adults and children. Believe me, you would never guess that zucchini can be so much enjoyed by the kids.
This ice cream turns out to be delicate, very “milky”, moderately sweet and healthy because it does not contain any cholesterol and sugar. Ready? Set?
Let’s go cooking!
We will need: (6 servings)
1/2 large zucchini
1/3 cup of oats
1 cup (250 ml) of coconut or almond milk (I use light)
1 tbsp. of sugar-free cocoa powder
Peel the zucchini. Actually, it can be left unpeeled if you like, but in this case, it will add a brighter vegetable taste to the dish that can scare away the little gourmands.
Add it together with the coconut milk and dates to a blender.
Pulse to get a homogeneous mixture.
Add the oats.
Add the cocoa powder.
The resulting composition is poured into molds and put into the freezer until it freezes.
