I must admit it took me a while to come up with the perfect Bundt Cake. Not too sweet, to too plain, not too dry, not too moist, not too complicated, healthy and delicious.
This cake is gluten-free, vegan and it looks stunning. The Bundt shape makes it special for any occasion: Easter, birthdays, cozy family get-togethers. Or you can make your neighbors happy by sending them this tasty gift.
This cake is very low in sugars. I use only 1/2 cup of sugar per 3 cups of dry ingredients while conventional recipes of this type typically have minimum two times more sugar in them. I am very happy to call this Bundt Cake my latest success!
Even though this cake is only mildly sweet I don’t recommend to cover it with any glazes or chocolate. It’s perfect as it is. Trust me!
You can add vanilla or almond extract to it if you want, raisins or even nuts. I’m sure it will be even more delicious!
And the smell!.. The aroma of this Bundt Cake can wake up your neighbors.

We will need: (1 medium sized cake)
1 cup (250 ml.) of gluten-free oats (you can use oat flour)
1 cup of rice flour (I use brown rice)
1 cup of almond flour
1/2 cup of brown sugar
1 table spoon of baking powder
1/2 cup of apple sauce
1/2 cup of canola oil
1/2 tea spoon of vanilla or almond extract
1. 1/3- 1. 1/4 cup of plant based milk (I use soy)
2 tea spoons of lemon juice or 1 tea spoon of apple cider vinegar
3- 4 table spoons of agave syrup
Coconut oil for baking.
Heat up your oven to 165C/325F.
Grind your oats or buy ready flour, mix with almond flour and rice one. Add baking powder.
Combine together apple pure, juice or vinegar, oil extract and milk. Mix wet and dry ingredients. Oil your pan, pour your butter in it.
Bake for 45 minutes or till it’s ready.
Let the cake cool. It’s very important.
I know it will be hard, because the smell is fantastic, but let the cake cool, then flip it on your plate.
Sprinkle with some powdered sugar if you want.
