In America, Easter has already passed, but in Russia, this holiday is yet to happen.
Usually, in the States, the table is quite simple for Easter, but there is often a sweet cake with raisins and various dried fruits.
Today we are cooking a very delicious, aromatic and juicy cake that can be an excellent alternative to the usual cake.
No flour, sweet glaze, or oil. Instead, I use oats, nuts and coconut flakes – everything we love, right?
I advise you to put more raisins or other available berries in it.
I promise you will not regret it! Ready? Set?
Let’s go cooking!
We will need:
1.1 / 4 cups (250 ml cup) of oats
1/2 cup of coconut flakes
1/2 cup of almonds
1/2 tbsp. of baking soda (I use baking powder)
1/2 cup of brown sugar
1/2 cup of almond milk
1/3 – 1/2 cup of orange juice
2 tbsp. of cranberries
3 tbsp. of raisins
2 tbsp. of dried blueberries
1 tsp. of cinnamon
1/2 – 3/4 cups of oats
1 tbsp. of brown sugar
1 tbsp. of coconut oil
Cinnamon to taste
Preheat the oven to 165C / 325F.
Grind the oats, nuts, chips and add the soda. Add the cinnamon.
Mix milk, juice, sugar and combine it with the dry ingredients.
Add the berries.
Lubricate the form with coconut oil and spread the dough there. Mix everything for crumbs.
Cover the pie with the crumbs and put in the oven for 50-60 minutes.
Allow the cake to cool completely.
Tasty and healthy!
Bon appetit and happy Easter!
