These cookies are amazing!
They’re crispy and leave a beautiful aroma all over the house – as well as being beautiful and very tasty!
I did not even have time to cool them properly, as my children were already rushing to try some, hehe.
In the recipe, I’m using sucanat sugar – this is the least processed version of cane sugar.
It has a dark color and a bright smell. It can be replaced with brown sugar or maple syrup.
Everything else, I suppose, will be very easy to understand.
Ready? Set? Let’s go cooking!
We will need: (20 pieces)
1 avocado
3 tbsp. of peanut butter
1 tbsp. of vegetable oil
2.5 tbsp. of sucanat or brown sugar
2 tbsp. of flaxseed meal
Slightly more than 1/2 cup (250 g) of whole wheat flour
1/4 tbsp. of baking soda (I use baking powder)
1 tsp. of cinnamon
1/2 cup of all-purpose flour
3 tbsp. of vegan or regular chocolate chips
Preheat the oven to 150C / 300F.
Mix all the ingredients in the blender, except flour and chips.
Mix the two kinds of flour, baking soda and add the composition from the blender.
Add the chocolate chips.
Make the cookies. Cover the mold with baking paper and put the cookies on it.
Bake for 15 minutes.
Done! Bon appetit!
