Today I present to you a wonderful and very healthy alternative to the traditional pizza.
The dough is cooked without the all-purpose flour and yeast, instead, I use garbanzo bean flour. Remember, I recently published a recipe for that? Surprisingly, the dough remains gentle, very fragrant and, of course, delicious.
My children were completely ecstatic and did not leave even a crumb from this pizza.
You can make this pizza vegan if you use vegan cheese.
The portion is small, as it should fit in a standard frying pan, but if you use a baking sheet or a wider mold, the recipe can be doubled and then there will be enough for everyone.
Ready? set? Let’s go cooking!
We will need: (1 small pizza)
For the base
1/2 cup of garbanzo bean flour (250 g cup)
125 ml. of water
2 tbsp. of olive oil + a little for frying
1/2 tsp. of dry garlic
1/2 tsp. of herb di Provence
Salt and black pepper to taste
For the filling
1/2 large portobello mushrooms
1/6 of a zucchini
1 sun-dried tomato
Vegan or plain cheese
Preheat the oven to 220C / 425F.
If you do not have ready-made flour, then do it yourself.
Combine all the ingredients for the dough and let stand for 30 minutes.
Lubricate the frying pan with olive oil and spread the dough. Put in the oven for 10-15 minutes. The dough should turn brown and easily leave the frying pan.
Cut everything for the filling.
Lay in layers on the finished dough and again put in the oven for 10-15 minutes. Done!
P.S. If the pizza is a bit dry, cover it with a lid and the dough will become soft in no time.
