Let me confess: I love mashed potatoes, but of course, since that dish is not super healthy I don’t have it much often.
Well, I did not… till I found that I can cook it from cauliflower.
Can you believe it?
And of course I make it a bit “Russian style”, i.e. boil it with a bay leaf so it actually develops the mashed potatoes flavor we are used to.
You can add this side dish to anything you want. It has very little calories and tastes amazing! Great addition to your healthy holiday table. Time to try! Ready? Let’s go cooking!
We will need:
1/2 of a small cauliflower
1,5 cup of water
0,5 cup of any plant based milk (I use soy)
1 bay leaf
Salt and pepper to taste
Cut florets off the stems. We will use only the florets for this recipe.
Pour water, milk, salt. Boil your cauliflower till ready.
Drain it. Take your bay leaf away. Add oil, garlic. Blend it till it’s smooth.
