Today I offer you the most delicious ice cream recipe—”Salted Caramel”, in which tofu is of prime importance.
It is strikingly tasty and very easy to prepare. Sweet, rich, rather creamy, does not freeze totally and does not turn into ice.
An ideal recipe for a sweet tooth!
Tofu has a very distinct flavor, which can easily be “hidden” by adding vanilla extract.
The nuts are roasted and salted, to get the taste that I’m describing to you.
The unusual combination of sweet dates and salted cashews will not leave anyone disappointed!

Let’s go cooking!
We will need: (2-3 servings)
1 pack of the softest tofu (silky)
10-12 large, sweet dates + 2 dates for the texture
1/2 cup roasted and salted cashews + a bit for texture
1/4 cup almond or regular milk
1 1/2 – 2 Tbsp. apple cider vinegar
1 1/2 tsp. vanilla extract
Chocolate chips (optional)
Of course, you need to choose tofu carefully. The package should indicate the absence of GMOs and, preferably, an indication that the product is organic. It should be low in salt and, of course, completely lack added sugar.
Press the tofu from all sides with paper towels, to remove excess moisture, which is superfluous in the preparation of ice cream. The more water that remains, the more iced your dessert will be. Less water makes the ice cream denser and “creamier”.
Mix the dates and nuts.
Add the tofu and milk.
Add the vanilla and vinegar.
Vanilla, as I said, perfectly “masks” the “cardboard” flavor of the tofu. You will get a thick composition. Pour it into a form.
Chop the additional nuts, dates and chocolate chips. Combine with the ice cream and mix it to give additional texture.
It’s ready!
Freeze until the desired consistency is reached. That’s all!
