
Today we are making a very festive ice cream.
Maple syrup, dates, pecans…
This ice cream is absolutely fantastic!
Its base is granola – baked or fried oats.
You can’t confuse this incredible flavor with anything else.
It also has a very piquant smell.
It is easily made and, I assure you, you will love it after the first spoon.
The recipe can easily become gluten-free, just replace the usual oats with gluten-free oats.
I strongly advise you to use the darkest maple syrup.
It will give your ice cream the finishing taste that is so necessary for this dessert.

Let’s go cooking!
We will need:
2/3 cups (1 cup-250 ml.) of Oatmeal
20-25 pecans
7-8 large, soft dates
2 tbsp. of dark maple syrup
1 & 2 / 3 cups of any sugar-free plant-based milk (I use soy milk)
1/4 tbsp. of starch (I use guar gum)
Fry the oats and nuts in a frying pan or bake them according to the recipe for granola. Distribute the oats and nuts on the baking paper and put it in the oven until it is ready.
Mix with the rest of the ingredients and blend in the blender.
It is necessary to obtain a uniform consistency.
As I said, the maple syrup is of great importance: the darker and more concentrated it is, the better.
Pour it into the mold.
Freeze for 3 hours.
Done! Pour the syrup and granola over the top if you want.
